Comments: Keep all foods covered in walk-in cooler to prevent contamination. Observed meat loaves and pies uncovered in the walk-in cooler. Sanitizer must be at least 200 ppm(quat). Sanitizer was not coming out of the dispenser at 200 ppm. Keep all potentially hazardous hot foods 135F or above. Cooked chicken on the buffet bar was 84F-135F and rotisserie chickens ranged from 123F to 128F.

Comments: Observed an employee handle raw fish and then begin to start other activities without washing hands. Hands must be washed anytime they become contaminated. Found raw eggs stored above pumpkin pie in the reach-in cooler. Found raw chicken stored above raw beef in the front reach in cooler. Found several foods in the reach-in coolers stored uncovered. Found rice, sauces and pork to be out of temperature. Potentially hazardous foods being hot-held must be kept at 135F or warmer.

Comments: Employee coffee cup with no lid stored in prep area. Employee beverages shall be stored with a lid away from food-prep areas and food contact surfaces, and consumed in a sanitary manner. Raw whole-shell eggs stored above chickpea dish and cut tomatoes in refrigerator. Store raw eggs below ready-to-eat foods. Do not wash or rinse utensils in vegetable prep sink; use prewash or three-compartment sink for that task.
