Comments: Observed a dishwasher handle dirty dishes, then wipe hands on a towel and then handle clean dishes. Found two buckets of sauce stored on the floor. Found serval items in the walk-in coolers stored uncovered. Found raw duck stored over pork in the walk-in cooler. Fried noodles stored uncovered under a meat prep table.

Grade: 90 (A)

Comments: Raw fish stored over beef in two-door freezer in back room. Oyster shuckers, utensils above prep line, shot glass, bowl, and knife stored dirty. Lobster bisque still not less than 45F after cooling overnight. Cheese on ice not held cold enough; butter in 1 door refrigerator not cold enough; pesto made with fresh herbs and oil stored above cook line not under temperature control.

Comments: In walk-in freezer, bread stored on floor, raw veal stored over cooked chicken. In freezer, raw shrimp stored over ready-to-eat food. Food in left side of right prep refrigerator not cold enough. Hold cold potentially hazardous food at 45F or less to prevent growth of pathogenic organisms.
