Grade: A (90)

Comments: Dish machine not sanitizing dishes, sanitizer is not dispensing. Sanitizer in spray bottles was too weak according to test strips. Dish machine sanitizing chemical was low, bucket was changed out. Sanitizer bottles are being filled from the dish machine. Need to get into the habit of checking the dish machine daily to insure that machine is properly dispensing chemical. Spray bottles were changed out.

Angelo's Restaurant

Grade: A (96.5)

Comments: Raw burger patties were stored above the dressings in the walk-in cooler. Store the patties in the meat storage area in the walk-in cooler. Store below the cooked meats in the walk-in cooler. Marinara sauce was hot holding in between the temperatures of 115-135F. Sauce was reheated to 165F. Make sure hot foods are held at or above 135F.

Bruegger's Bagels

Grade: A (94)

Comments: Sanitizer mixing unit dispensing sanitizer less than 200 ppm quaternary ammonium; spray bottle over 400 ppm. Always check sanitizer strength with test strips. Several items which were stacked too high on cold holding table were not held cold enough (cheeses, cream cheeses). These items had been placed into table less than an hour ago and were switched out with cold food from the walk-in.
